Alright, I'm working on the harder difficulties and have at least one of each monster including hybrids, so I'm going to write down some stuff.
Stars
I believe the first star is merely just completing the stage.
The second star seems to be a time limit, as in complete this stage in X number of turns.
The third start seems to be a minimum coin requirement, as in collect X amount of coins.

飛距離 - Flight Distance. So, the green girl can reach the farthest.
Attack Patterns
Blue Girl - Uses Sword. Attacking mid-air interrupts flight and will drop you downwards while hitting anything on the way once. Attacking on the ground makes her jump forward and then slash downwards, hitting once.
Black Girl - Uses Katana. Attacking during flight interrupts flight, hitting several times in a long line horizontally, moving past enemies and sometimes objects. Attacking on the ground does a similar pattern. Useful for AoE attacks.
Green Girl - Uses Bows. Attacking mid-air interrupts flight, shooting two waves of arrows, first up and then down. Attacking on the ground makes her jump forward and do the same pattern. Damage dealt is extremely high when attacking mid-air and directly next to an enemy.
Red Girl - Uses spears. Attacking during flight makes her lose momentum, attacking in a small area several times. Attacking after flight makes her move a small distance forward then attacking with the same pattern. She seems to have an additional effect when attacking, triggered by hitting multiple enemies at once, which creates a black orb, which hits multiple times.
Yellow Girl - Uses staff. Attacking during flight interrupts flight, healing all nearby allies in a circle while firing a small magic barrage forward in a small wave. Attacking after flight results in moving forward a small distance and doing the same pattern.
Slime Girl - Cannot use weapons. Attacking mid-air changes flight direction, aiming diagonally downwards, hitting once in a sizable AoE. Attacking on the ground makes her move forward slightly and then use her attack.
Bee Girl - Uses spear. Attacking during flight is similar to Slime Girl, but instead hits multiple times within an smaller area. Attacking after flight will make her fly up a small distance and then a diagonal diving attack.
Bird Girl - Uses bow and can float. Attacking during flight stops flight immediately, making her shoot two waves of three arrows each. The two waves are aimed in different directions: the first wave is aimed lower than the second. Attacking after flight will move her horizontally towards an enemy and then shoot the two waves of arrows. When attacked, she will move upwards. May be troublesome as she might move past a target and shoot in the wrong direction or float above the optimal spot for her to shoot.
Plant Girl - Cannot use weapons. Attacking during flight will make her float for a bit as she hits an enemy once via tree root, seemingly impossible to miss. Attacking after flight will make her move forward and do a similar pattern. I don't know what determines her target: it might simply be the farthest enemy possible.
Ogre Girl - Uses swords. Attacking during flight interrupts flight, attacking downward immediately, having a secondary effect similar to an Ogre attack. Attacking after flight makes her leap diagonally up and then smash back down.
Wolf Girl - Uses staff. Attacking during flight interrupts flight, making her dash horizontally as she drops projectiles on enemies below her dash path. Attacking after flight makes her do a similar pattern.
Spider Girl - Uses katanas. Attacking during flight makes her lose momentum, making her attack in a wide wave, hitting twice. Attacking after flight makes her move forward and do a similar pattern.
Octopus Girl - Uses staff. Attacking during flight makes her lose momentum, making her cast several meteors from above her, striking diagonally down, each meteor hitting once. Attacking after flight makes her move forward and do a similar attack pattern.
Plesio Girl - Uses staff. Attacking during flight makes her lose momentum as she fires a single hitting bolt of magic that moves in a straight horizontal line and penetrates targets. Attacking after flight makes her jump forward and do a similar pattern. Seems, uh, useless.
Snake Girl - Uses sword. Attacking during flight changes her flight path upwards, making her attack in a spinning attack which may hit multiple times. Attacking after flight, she does a similar pattern.
Centaur Girl - Uses bow. Attacking during flight will make her lose momentum as she locks onto the closest target and fires a single arrow. Attacking after flight will make her jump a long distance forward but still fire at the same target she attacked first. Can't tell if the arrow is piercing.
Bat Girl/Succubus - Uses spear. Attacking during flight freezes her position, making her shoot several magic bolts in a circle all around her. Attacking after flight makes her move forward horizontally and do a similar pattern. Tons of hits if done directly next to an enemy.
Wolf/Octopus Hybrid - Uses sword. Attacking during flight will make her automatically dive for the closest enemy to spawn. This attack can penetrate and hits once. Attacking after flight does a similar pattern, but it seems to change priorities to lunge for the nearest enemy.
Slime/Plant Hybrid - Cannot use weapons. Attacking during flight makes her float for a short while as she attacks all enemies that are on the ground once. This includes if they're standing on objects. If enemies are close enough to each other, hitting more than once is possible. Attacking after flight makes her move forward slightly and then do a similar pattern.
Centaur/Ogre Hybrid - Uses bow. Attacking during flight makes her lose momentum as she fires a single shot diagonally up. While this first shot doesn't deal damage, it explodes into a rain of arrows that fires downward in a wide fan. Attacking after flight, she jumps forward and does a similar attack pattern. It seems that her targeting post-flight is a bit odd; if she jumps towards an enemy and passes it, she will not turn back towards the enemy and will instead shoot the arrow in the direction she jumped in.
Bird/Plesio Hybrid - Uses staff and can float. Attacking during flight freezes her position, then makes her heal all allies in a circle AoE and then hitting an enemies in that AoE once. Attacking after flight makes her move forward and do a similar pattern.
Bat/Snake Hybrid - Uses spear and can float. Attacking during flight will freeze the hybrid's position, shooting out a small ball which inflicts low damage forward, diagonally down. After travelling a small distance, the ball explodes into a similar attack as the Succubus. The bolts seem to travel a longer distance. Potential for high damage if used correctly.
Spider/Bee Hybrid - Uses katanas. Attacking during flight removes all momentum, making a multi-hitting slash that crosses the entire screen, aimed by two points: where the Hybrid attacked from and its target. Attacking after flight does not have any movement, merely attacking in a complete line defined by the previous two points mentioned.
